There are so many misconceptions about eating a plant-based diet, it’s ridiculous. Ridiculously insane, and ridiculously inaccurate. With so many products from which to choose in the store these days, not to mention all the knock-offs we can create in our own kitchen, I truly am challenged to find something that any vegan is missing out on. These bomb ass burger patties from Beyond Meat are definitely a testament to how close “to the real thing” us herbivores can get. I mean, look at that beast! It simmers, releases the most mouth-watering aroma, and has the perfect taste and texture leaving you wanting a double burger. If you haven’t tried this product, I seriously recommend that you do. ASAP.
Now, while I love a great burger, I’m not always too fond of the bread. Sometimes it’s perfect, but other times I might want the crunch of a cabbage or iceberg lettuce wrap, or a huge bowl of burger salad if my appetite is through the roof that day. After a workout that kicked my ass today, I’m ready to refuel. Check out this shit!
Fast, simple, delicious, and super healthy VEGAN burger salad. I won’t bother with a recipe (because it’s so versatile and dependent on your taste and what you have on hand) but I’ll tell you how it went down so you can whip one up too!
I cut up some of my favorite veggies in grill-able shapes (zucchini, onion, summer squash, carrots, mushrooms on a k-bob, and even some asparagus). I wasn’t playing around. Tossed those on the grill for about 15 minutes with turning and then made room for the burgers.
Now, these awesome things are fantastic for so many reasons. One of them being that they only take a few minutes on each side for them to cook.
While everything grilled I chopped up some kale and purple cabbage for a salad bed.
With everything done, piping hot and ready for consumption, I threw it on top of the salad and added my favorite burger fixings (Veganaise, ketchup, pickles). You could certainly use salad dressing, or even nothing AT ALL because the veggies and burgers are so perfectly juicy that the salad is quite wet enough without additional fixins’.
